sphinx: set -d doctrees cache dir option

it defaults to ".doctrees under the build directory", which is /doc/.doctrees for this template

it appears this only happens with recent sphinx versions with -j, but this option has been around for years (I find SO questions from 2015)

set this path to $build/tmp/doc/sphinx/doctrees
